In the Guaraní language, the word ‘táva’ means ‘community’, underscoring what this restaurant in the historic centre of Asunción is all about: gathering around the table with loved ones to celebrate good cooking. The space is intimate, its smattering of wooden tables, black-and-white checkerboard floor and low-level lighting reinforcing the cosiness. Chef Luis Parades invites diners to experience traditional Paraguayan recipes, passed down from generation to generation, through his contemporary interpretation, marrying authentic flavours and the freshest ingredients on the plate. Take the classic corn cake, for example, which is brought bang-up-to-date with a featherlight corn foam, grilled Paraguayan cheese and just-picked herbs. Other dishes might include pan-seared river fish fillet served with a mandioca purée and zesty sour orange sauce; or slow-cooked beef loin accompanied by a malbec reduction and mbeyú-style rice.
