A restaurant built from recycled shipping containers in Villa Morra is the setting for chef Sofía Pfannl's creative New Paraguayan cuisine and her sommelier husband José Miguel Burga's carefully curated wine and cocktail lists. They both have an impeccable CV – she was at Peru's Central and Italy's Ostería Francescana, he worked in the kitchens of Central and also New York's Cosme. Indeed it was working at Central, the three-time No.1 on Latin America's 50 Best list, where they met. When they opened their own place in 2017, the husband-and-wife team decided to look to native ingredients (Pakuri is the name of an indigenous fruit) for their food and cocktails. Dishes include meats cooked in a traditional tatakua clay oven and local fish served perhaps with cherries, avocado and crispy-spicy chicharron. Dessert might be a creamy corn mousse with fresh strawberries or a chocolate mousse with miso sauce and pakuri dulce. Cocktails are made using foraged herbs; the wine list is compiled from natural and organic pours.
