A restaurant built from recycled shipping containers in hip Villa Morra is the setting for chef Sofía Pfannl’s creative New Paraguayan cuisine and her sommelier husband José Miguel Burga’s carefully curated wine and cocktail lists. The husband-and-wife team look to native ingredients (Pakuri is the name of an indigenous fruit) for their food and cocktails, with dishes including meats cooked in a traditional tatakua oven and three types of local fish served with unusual herbs, fruits and vegetables. The pair met while working at Central in Peru, the three-time No.1 in Latin America’s 50 Best list.
