Toro
Asuncion, Paraguay
Carnivores will rejoice in Toro, a restaurant that specialises in well-prepared, flame-cooked meat. The decor feels suitably apt. A huge mural of a bull greets guests, while on another wall, a sign translates as: ‘The soul of the flesh is in the blood’. At the centre of the space, there’s a glass chill cabinet displaying huge joints of beef. Wooden tables, chairs and floors bring simplicity to the interior; on warmer days you’ll want to be on the outside terrace sitting beneath the palm tree. There’s a selection of starters, though the selling point is what’s cooked on the grill. Choose your cut – rib-eye, ribs, flank, skirt, T-bone, sirloin or rump – then decide on your accompaniments from a list that includes cassava purée, fried potatoes, mandió chyryry (a traditional Paraguayan stir-fried cassava dish), roasted vegetables and creamy rice with mushrooms. There are a few other dishes such as salmon, chicken and salads, but if you’re a vegetarian or sweet-toothed, you might want to skip straight to dessert, which includes the signature dark chocolate volcano filled with dates and toffee sauce. As you might expect with all that meat, the red wine game is also strong.
