Extensive research into Peru’s enormous pantry led chef Virgilio Martínez to create an innovative tasting menu reflecting the nation’s incredible biodiversity. The 17-plus courses explore every altitude of the country, from 20m below the sea to 4,100m up in the Andes. Myriad variations of Peruvian staples such as corn and potato feature heavily, as well as more obscure ingredients, including piranha. Central debuted on Latin America’s 50 Best Restaurants in fourth place in 2013, going on to top the list the following three years in a row – and it is also a regular at the upper heights of The World’s 50 Best. Pía León – also Martínez’s wife – oversees the kitchen and is also in charge of Kjolle, her first solo restaurant, which opened in 2018 and is located upstairs from the main Central dining room.
