Born through immigration from Asia to South America in the early 20th century, its evolution reaches new heights at this Miraflores restaurant. Decor is your first hint; tropical plants drip down walls lined in contemporary wooden slatted windows. Fastidious seafood preparation – as an example, whole tuna is often butchered in house – and targeted sourcing (black truffles for sushi, when in season, might come from Canistro in Abruzzo) means chefs control every last detail in-house.
