St Regis Doha-based Indian fine-diner Riyasat has had a 2023 rebrand. Now called Rivaaj, this restaurant has been transporting guests back to the majestic Indian estates of the 19th century since 2020. Designed by international architect firm fdp, the sumptuous interiors feature tactile, patterned fabrics in a fiery palette of reds and golds, while a terrace allows for poolside dining. At the helm is MasterChef India judge Surjan Singh, better known as Chef Jolly, who prides himself on sending out expertly crafted dishes made with super-fresh seasonal ingredients. Ranging from Goan street-food classics to aristocratic cuisine (Singh has had personal tutorials from royal court kitchens), menu standouts include tandoor oven-cooked kebabs, a roasted chicken from Amritsar served drenched in cooling yoghurt and green cardamom and banana leaf-enrobed sea bass. Desserts will delight anyone with a sweet tooth, with the handmade kulfi – creamy traditional Indian ice cream – a highlight.
