When it opened its doors in 2012, Lolla was a dimly lit slither of a room specialising in Mediterranean-inspired small plates for diners who really knew and valued good food. Fast forward more than a decade and it remains much the same, no mean feat on fast-changing Ann Siang Road. Sure, it now takes (very necessary) bookings and focuses on a set menu, but the team have resisted the temptation to respond to their many awards by overcomplicating things. The best seats in the house are still the 13 stools overlooking the open kitchen, while the smokey, cement-licked space has more than a hint of grunge to it, and the food remains exemplary. Chef Johanne Siy’s CV reads like a roll call of the world’s finest restaurants – Noma, Fäviken, Restaurant André – so it’s unsurprising her menus have a global feel. Dishes change with the seasons, but may include the likes of avocado with smoked eel consommé and jalapeno granita, or her signature serve: sea urchin pudding with silken squid ink custard.
