At Ushidoki Wagyu Kaiseki, top quality Ozaki wagyu beef is the name of the game. Chef Hirohashi Nobuaki treats the prized beef from the Miyazaki Prefecture (harvested at 32 to 36 months, instead of the conventional 28, for more flavour) with the same care and precision used to prepare sushi (his prior specialisation). The tongue-to-tail tasting menu offers different cuts of beef served in various ways: grilled, deep-fried, braised, sushi and, the signature, sukiyaki with soft egg and shaved black truffles.
