Highly-decorated chef Bertus Basson's wine estate endeavour – one of more than half a dozen culinary projects he has on the go – is especially ambitious: a modernist glass dining room overlooking the jaw-dropping landscape of the Waterkloof Wine Estate and neighbouring False Bay. It opened its doors in October 2022 and exclusively serves hyper-seasonal six-course menus, with all dishes dedicated to the best ingredients available and – naturally – paired with Waterkloof wines. Offerings might include tuna with celeriac, lamb rib with fig and dukka, and beef with carrot and onion; plus a peaches and cream-inspired concoction for dessert.
