Fabio Daniel didn’t take the usual route to the pass. Following a career as a pro basketball player, he set out to travel the world, funding his wanderlust by working in kitchens along the way. It was his now-wife who tempted him to South Africa, where he landed at Rust en Vrede, working his way up from a junior position to head chef. Enveloped within the original cellar of one of Stellenbosch’s lauded wine estates, his food is a paragon of contemporary French cooking, accented by his wordly experience and Brazilian-Italian background. Exciting presentation – modern, colourful, detailed – across six courses is a given, with dishes running the gamut from langoustine with black garlic in a nuanced vanilla bisque and tender beef with cauliflower and farofa to a delicate banana desert elevated by dulcey chocolate and miso.
