Ryunique

Ryunique – a portmanteau of 'unique' and chef Tae Hwan Ryu's surname – made Asia's Best 50 list soon after its opening in Seoul's swish Gangnam District in 2011. Though it has since moved, remaining in the same area, the menu continues to reflect the varied cultures and cooking styles Ryu encountered on an eight-year culinary odyssey, with an emphasis on French cuisine. Downstairs is home to the chef's 'laboratory' where he experiments and creates, perfecting each and every dish. The first floor dining room, accessed by a spiral staircase, is appropriately chic with pale walls, floors and tables: wall-to-wall glass means you can see the bustling street below (and are visible to pedestrians below), though diners may barely notice, so fantastical and meticulous are the dishes. Expect foams, purées and avant-garde garnishes. The wine list, featuring French vintages galore, is also a delight.
