Ryunique – a portmanteau of ‘unique’ and chef Tae Hwan Ryu’s surname – made Asia’s Best 50 list soon after its opening in Seoul’s swish Gangnam District in 2011. Its menu reflects the varied cultures and cooking styles Ryu encountered on an eight-year culinary odyssey, with an emphasis on French cuisine. The dining room is appropriately chic, though diners may barely notice, so fantastical are the dishes. Expect foams, purees and avant-garde garnishes. The wine list, featuring French vintages galore, is also a delight.
