Tucked into Seoul's well-heeled Sinsa neighbourhood, The Mix Lab is a bar-laboratory where cocktail craft meets scientific rigour. The team's philosophy is one of serious research: ingredients are interrogated as much as they are poured, all in service of what the house calls "experiential drinking." The menu is structured around the Periodic Table of Elements, with ingredients treated like elements and cocktails as richly layered compounds. The space also reflects the same approach – sleek and clinical, with a viewing window onto the lab, where bartenders move amongst high-tech apparatus you might sooner expect in a university. Whisky lovers are more than catered for, with a collection of more than 100 independent bottlings.
