Having moved a couple of times, this neo-bistro has now settled in Yongsan-gu, an upscale neighbourhood filled with chic boutiques and restaurants. Zero Complex is chef Lee Choong-hu's innovative neo-bistro. It's stripped back in decor – all pale woods and white walls, with plenty of space between the tables – but this allows the French technique-meets-Korean ingredients tasting menu to sing, with dishes focusing on one main ingredient, such as corn, asparagus, mushroom or chocolate, and elevating it. Fresh vegetables are served with a fermented paprika sauce and smoked butter; king clams are grilled over charcoal and served with seaweed sauce; panna cotte is made with organic tomatoes and olive oil. The chef, who trained in kitchens in France, and his competent team use herbs and flowers from the restaurant's own greenhouse and other produce is sourced from nearby farms each day; the food is paired with natural wines.
