Dreamt up by Madrid-born chef David Muñoz (you can't miss him, just look out for the mohawk and piercings), DiverXO has become an institution for Madrid's movers and shakers. Past dishes include the likes of pork skin with black sesame brioche, salmon roe and cherry sauce, monkfish with potato glass (multicoloured shards of potato) and suckling pig with steamed carrot dim sum and bull tail noodle soup.
