Sacha
Madrid, Spain
This storied bistro has been a favourite – not just with locals but also with chefs from near and far, perhaps the finest accolade a restaurant can receive – ever since it opened in 1972. Behind the old-fashioned, electric blue façade, the intimate dining room is adorned with black-and-white prints, simple wooden chairs and white tablecloths. Chef-owner Sacha Hormaechea continues to serve classic dishes such as onion soup, oreja de taberna (pig's ear), sole meunière and the must-try steak tartare. The egg and potato tortilla with sausage, leek and peppers is always a favourite, as is the 'tarta dispersa', a deconstructed cheesecake-style dessert of almond cake, cream and raspberry purée. There's also a list of daily specials, which might include razor clams or sweet breads – all washed down with a decent selection of hand-picked wines. In summer, there's additional seating in the peaceful outdoor terrace area, surrounded by trees.
