Opened in 2017 by ‘maestro coctelero’ Diego Cabrera, Salmon Guru is a must-visit Literary Quarter haunt – and the recipient of the Highest Climber Award in The World’s 50 Best Bars ranking in 2019. There are three distinct areas: a ‘60s speakeasy-style space, with bar counter, leather booths and eclectic artworks; a manga comic-inspired room with a big shared table (that must be booked in advance), presided over by Cabrera himself; and a more intimate, softly lit den evocative of Asian night markets. Cocktails include accomplished classics, fiery, chilli-fuelled pours, and specials concocted in association with renowned botanist Pepe Orts. Tasty croquetas, tortilla, sandwiches featuring artisan bread and top-notch desserts complete the picture.
