‘Vinos, finos, cervezas, refrescos y café’. The words etched on the decorative facade say everything about its slant. This bar-slash-eatery, in Las Letras, has been on the scene since 1856. Today, Argentinian mixologist Diego Cabera – of Salmón Gurú, No.22 on The World’s 50 Best Bars 2020 – is responsible for its ethos, combining the key tenants of a Spanish tapas joint with a rip-roaring cocktail bar out back. Its design – featuring plenty of woodwork and azulejos tiles – riffs on a classic taverna, spliced with rich, modern furnishings and nods to the speakeasy heyday. A soundtrack of Roaring Twenties tunes, tango and jazz provide the backdrop to gin-based classics like Media Combinación – sipped by the likes of Salvador Dalí and Ava Gardener here back in the day – Campari-forward twists on aperitivo and top-drawer vermouths. On the food front, contemporary tapas dishes globe trot their way to your table.
