For four decades Casa Pueblo delivered sherries, snacks and chat in the heart of Madrid’s Centro, serving locals seven days a week from its curving bar counter. Then in 2024 under the helm of renowned Japanese bartender Shingo Gokan it transformed into Devil’s Cut, catching the attention of drinkers from much further afield. Drawing inspiration from Gokan’s former tenure at Angel’s Share in NYC’s West Village – an entire section of the menu is dedicated to that bar’s classics – his native Asia and local sherry, concoctions are as unique as they are memorable. Try a Devil’s Bamboo, with fino sherry, dry vermouth and tomato, or a jamon Iberico-infused old fashioned. You won’t regret the selection of fusion snacks, either; think dashi sauce olives or miso queso marinated anchovies.
