Change is the only constant in Arzak's always evolving set meals. Run by the Spanish gastronomic royal family the Arzaks for generations, this Basque culinary landmark is about pushing boundaries while staying true to the ethos of using only the freshest and best ingredients available. It has become something of a pilgrimage stop for culinary travelers heading to San Sebastian and what comes out of the restaurant's kitchen-cum-laboratory will change the way you look at food: hake kokotxa print with leek kimchi and Ibarra peppers) and monkfish with cabbage puff pastry and refrito sauce are both emblematic. To finish, expect playful plates and unexpected combinations such as 'burnt' ice cream: toasty sheep's milk and honey ice cream paired with brioche dulce de leche, sweet fritters and vegetable leaves.
