Run by the Spanish gastronomic royal family the Arzaks for generations, this Basque culinary landmark is about pushing boundaries while staying true to the ethos of using only the freshest and best ingredients available. What comes out of the restaurant's kitchen-cum-laboratory will change the way you look at food: pigeon with potato feathers, Red Space Egg with red pepper skins, pig trotters and mushrooms, and sea bass served on a tablet computer showing moving images of the sea are all emblematic.
