As the owner Johan Evers says himself, the aim of the game at this laid-back neighbourhood bar is to “work hard to make your senses do hula hoops, your tongue swirl and your heart skip a beat”. Done, done and done. Set it an old café, which the Evers did up himself, it’s charged with a sense of bonhomie. Don’t expect to see any eponymous Gemma at the shaker, the name’s acronymic, outlining the bar’s key approaches – in short, generosity of spirit and shared knowledge, artisan craftsmanship, zero-waste (“cherish every drop of nectar, herb and spirit”) and providing sanctuary for any occasion. On the tempting menu, many drinks come with their own backstory (with globally reaching inspiration when it comes to the flavour profiles and ingredients), plus, there are familiar numbers, albeit with a Gemma take, alongside. Emblematic, the signature Gemma features gin, 24-hour macerated pistachio saké, ginger and apple cider-vinegar preserved grapefruit and lime.
