Chef Niklas Ekstedt may have worked at El Bulli and The Fat Duck, but don't expect to find molecular creations on the pass of this slick-yet-welcoming Stockholm dining room. Instead, when he opened his eponymous restaurant in 2011, it was with just a fire pit, a wood-fired oven and a wood stove. Swerving trend in favour of tradition, his back-to-basics style of cooking draws on his childhood, Jämtland heritage and age-old Scandinavian cooking techniques. Evolving the New Nordic canon, flavour is developed from varying woods, charcoal, smoke, ash and soot. Across multiple courses, this restaurant's most stunning dishes might include ember-baked new potatoes with peas and fava beans; oysters seared in beef fat; juniper-smoked turbot with lovage and hay-flamed lamb with beets and Jerusalem artichoke.
