Chef Niklas Ekstedt may have worked at El Bulli and The Fat Duck, but don’t expect to find molecular creations on the pass of this slick-yet-sultry Stockholm dining room. Swerving trend in favour of tradition, his back-to-basics style of cooking uses fire to elevate a seasonally driven menu. Evolving the New Nordic canon, nuanced flavour is developed from varying Scandinavian woods, charcoal, smoke, ash and soot. Over four or six courses, stunning dishes run along the lines of ember-baked new potatoes with peas and fava beans, juniper-smoked turbot with lovage and hay-flamed lamb with beets and Jerusalem artichoke.
