A cosseting wood-fuelled oven is at the centre of both the dining room and the menu at this unassuming neighbourhood joint in Stockholm’s Sibirien area. Agrikultur is ex-Frantzén chef Filip Fastén’s tribute to modern Swedish classics. Here, vegetables take centre stage, with meat providing a hearty undertone to the seasonal five-course menu. Bold Nordic flavours shine in the likes of fish bouillon with raw, grilled and dried cucumber, crispy white moss with chanterelles and reindeer heart and a celeriac tart with chamomile crème pâtissière, cloudberries and marigolds. Blonde-wood furniture, crisp linens, stark white tiles and piles of birchwood complete the look.
