Stockholm, Sweden

Step through the imposing facade of the historic Grand Hôtel and be transported from Stockholm’s waterfront to the culinary world of Mathias Dahlgren. His ethos is to put Swedish food on a global billing. In this informal, modern bistro, he splits the menu into sections including ‘from our country’ and ‘from other countries’, all the while using local produce to create transnational flavour. And there’s flavour in spades. Dishes likes wagyu beef tataki with beetroot, butter-fried turbot with elderflower, carrot and hollandaise and braised pork cheeks with rye bread and celeriac are exemplary.
