Matbaren
Stockholm, Sweden
The historic Grand Hôtel's imposing façade opens onto an Ilse Crawford-designed dining room, and where you'll find the culinary world of Mathias Dahlgren. His ethos is to put SWedsish food on a global billing, using the freshest seasonal ingredients across a series of vibrant medium-sized dishes in this informal, modern bistro. Here, you'll find flavour in spades. Dishes such as tartare of dry-aged beef come with salted lemon, lumpfish roe and horseradish; seared local squid with cockles, potato cream and garlic; and just-landed langoustines provide the perfect match to a dill mayonnaise. Leave room for the cheeses with rye bread, fig and apple marmalade or the sorbet of berries and herbs. You can opt for the four-course set menu, which gives the best overview of what this place is all about. The wine and cocktail list is pleasingly easy to navigate.
