Sitting within the landmark Grand Hôtel, this smart, oak-panelled bar is named for the hotel’s founder, Régis Cadier, who wished for it to be a haven for epicureans near and far. The atmosphere is inviting and sophisticated in equal measures, with attentive staff, harbour views and luxurious, classic décor. But don’t be fooled – the drinks offering sees the use of cutting-edge technique (lots of washes and clarification) apparent across an ambitious cocktail list. Signature tipples tread the line between classic and complex, with undertones of New Nordic nudging the ingredients list – Cloud, combining Michter’s US*1, punch, cloudberry and vanilla is a heady pick. A solid bar menu (think caviar, oysters and truffled fries) and infamous brunch offering on weekends are added bonuses.
