Talented chef Paul Lee draws inspiration from classical French cuisine and America’s laidback restaurant scene to create flavourful fine dining plates and a sophisticated yet informal atmosphere. Rather than writing a menu, Lee prefers to play with diners’ expectations through a series of small plates featuring foams, broths and mousses, all served in unexpected ways such as on a smoking pine bough or under a square of black leather.
