Every drink looks alluring under the spotlight within this high concept “drinking room”, where the spirit of the world’s most progressive restaurants has been translated into the realm of cocktails. With an almost all-black interior scheme, theatrical lighting and shelves stocked with mysterious dried herbs and spices lining the walls, at times the captivating bar feels like an experimental laboratory ̶ an aesthetic bolstered by bartenders in fresh-pressed white lab coats. For the cutting-edge cocktail programme, a multi-course menu is split into three sections ̶ starters, mains and afters – to mimic those of a three-course meal, and during which guests can choose where to begin and where it ends. Ingredients sourced from local farms (not just fresh produce, but everything from cheese and herbs to fish) are deconstructed, distilled, blended, brined, fermented, carbonated and beyond; all to capture clarity of flavour.
