On the site of what used to be his parents' business, Andrew Wong's eponymous restaurant pays homage to China's 2,000-year culinary history through a modern, inventive lens. Diners perch at the counter or at intimate tables, watching the open kitchen in action as the likes of impossibly delicate and intricate dim sum, seabass with fermented tofu sauce, wok-seared wagyu beef and a build-it-yourself Shanxi pulled lamb 'burger' with Xinjiang pomegranate salad are prepared – all designed to be shared, encouraging conversation and a sense of discovery. The signature The Collections of China set menu takes diners on a regional journey of more than 30 dishes served banquet style, exploring flavours from across the country, highlighting both traditional techniques and Wong's contemporary reinterpretations. Complementing the food is an elegant drinks selection: there are three wine pairings by head sommelier Mickael Metayer, with glasses somehow matching the diverse range of flavours on the table; teas are sourced from small, specialist farms; while sophisticated cocktails often feature the restaurant's customised gin infused with Sichuan pepper.
