A London institution, Dukes was a favourite of James Bond author Ian Fleming and is famed for its ice-cold, and rather large, martinis (shaken not stirred). These are created on a little trolley right next to the table and served in the now unfashionable V-shaped glasses. Well hidden, tucked inside the namesake hotel, it’s here that long-term bartender Alessandro Palazzi holds court with his frozen spirits, bespoke vermouth and generous peels of Amalfi lemon. The bars interior boasts overstuffed armchairs and vintage portraits littering the walls – this is old-world glamour and guests treat it with the same reverence as the staff do.
