Elske ('to love' in Danish) is the brainchild of husband-and-wife chef team David and Anna Posey. Both veterans of local legend Paul Kahan's restaurants, they have amassed experience and inspiration all around the world, but especially in Scandinavia. Their first solo project is as at home in Chicago as it would be in Copenhagen, with a creative nine-course tasting menu available each night. Diners shorter on time will find plenty available a la carte. Dishes are a masterclass in new Nordic cuisine, with the traditional preservation methods of brining, drying, smoking and fermentation much in evidence. Salt-cured anchovies are layered with fennel pollen on sourdough, smoked Arctic char comes with turnips and ginger, and Belgian endive is lifted by pickled raisins and walnuts. The signature dessert is a sunflower seed parfait with sour honey and licorice.
