Husband-and-wife chef team John Shields and Karen Urie Shields have created a smart gastro-bar in The Loyalist. As much care goes into small plates as you’d expect from Smyth, their Michelin two-star establishment upstairs. Share scallops and seaweed butter, whole squab with rhubarb and greens and summer truffle roti. Many fruits and vegetables are sourced from a local farm with whom the team works closely. The craft cocktail list is also farm-inspired: try smoky rhubarb-flavoured ‘Empire of the Sun’.
