The Loyalist

Chicago, US

Husband-and-wife chef team John Shields and Karen Urie Shields have created an elevated neighbourhood-friendly gastro-bar in The Loyalist. As much attention goes into its farm fresh, French-focused menu as you'd expect from Smyth, their three Michelin star sibling upstairs. Beautifully plated dishes include the likes of beef tartare, eggs mousseline with caviar and brioche, and an upgraded deviled egg with smoked trout and pickled beet. It's also renowned for its burgers: The French Smash (a smashed patty with herb butter and cornichons) and The OG Cheeseburger are consistent favourites. The wittily-named craft cocktails are a cut above, too: whiskey-based 'Natural Corn Killers' features corn flakes, butter, mushrooms and a scoop of sweet corn ice cream, while 'Pepper Off Dead', is a zesty mix of gin, red bell pepper, green peppercorn, basil, lemon, ginger and egg white.
