A 16-seat counter restaurant is the setting for renowned chef Keiji Nakazawa’s classic Japanese omakase within the Ritz-Carlton Waikiki Beach resort. Its Honolulu location brings more than 40 kinds of fresh fish alongside multiple types of seasoned rice, and highlights include Maui bonito topped with Hawaiian mustard and onions, baby red snapper nigiri dusted with egg yolk and yuzu, and, of course, the classic otoro tuna nigiri. Nakazawa is considered one of the best sushi chefs in the US.
