Chef Gavin Kaysen uses seasonal Midwest ingredients then applies French culinary know-how at this restaurant located in a former stables dating back to the early 1900s. Kaysen’s dishes are beautifully constructed and well thought out. Those with time constraints can enjoy a few bar snacks, such as duck and pork meatloaf sliders and black truffle arancini with some cocktails. At dinner, kick off with bison tartare before enjoying trout with poached oyster, sorghum dumpling and sorrel cream or one of the heritage grain pasta dishes such as ravioli al’uovo. Spoon and Stable’s dessert and artisanal cheese game is also strong – peanut Mont Blanc tart with smoked milk chocolate and orange Cointreau ice cream or chocolate budino with caramel and sourdough shortbread are lick-the-plate good. Kaysen is the founder of Soigné Hospitality Group, which aside from this one, includes a handful of other thriving businesses.
