Demi is a little sister to nearby Spoon & Stable in every sense of the word: this small-but-perfectly-formed kitchen counter restaurant only has 20 seats, and turns each just once per night. Clearly a long-held dream for chef-proprietor Gavin Kaysen, Demi is a tasting-menu-only venue, with provenance and seasonality at the fore. Kaysen spent time working under mentor Daniel Boulud in New York where he scored a James Beard Rising Star Award, before returning to his home city of Minneapolis to open his own restaurants. Demi's interiors are adorned with the work of up-and-coming artists and the plates sent out from the open kitchen are no less eye-catching, but whilst the menu is (of course) ever-changing, dishes could include Sakura Farms pork coppa, roasted eggplant, shishito peppers and pickled cherries or a strawberries and cream dessert with white chocolate crémeux, Sicilian pistachios and white asparagus ice cream​​​​​​​​.
