Ethiopian and Swedish cuisines might not seem to have much in common at first glance, but when ushered together in the hands of celebrity chef Marcus Samuelsson, something unique happens. Using his own global heritage as inspiration, the two cultural cuisines complement one another in Hav & Mar (hav is Swedish for sea and mar is Amharic for honey). Located in New York’s artsy Chelsea neighbourhood, it boasts industrial-warehouse-meets-Ikea vibes, with dishes that match the high energy of the room. From the hard to resist bread basket featuring teff biscuits (scones), blue cornbread, crispbread and flatbread with shiro hummus and apricot jam, to curry goat gyoza and communal dishes like the beyaynetu branzino, which arrives with a selection of curries and veg, executive chef Fariyal Abdullahi infuses each generous portion with heart. A large bar area with a daily ‘mermaid happy hour’ features discount cocktails alongside a rotating selection of beer and wine by the glass, plus bar snacks and oysters.
