Ethiopian and Swedish food might not seem to have much in common at first glance, but when ushered together via the intersection of seafood by thoughtful celebrity chef Marcus Samuelsson, it’s easy to see how the two cultural cuisines complement one another. Located in New York’s artsy Chelsea neighbourhood, Hav & Mar—Hav is Swedish for “sea,” and Mar is Amharic for “honey”—boasts industrial-warehouse-meets-Ikea vibes. The vibrancy of the cuisine matches the high energy of the room - from the humble bread basket featuring teff biscuits, blue cornbread, and tomato chutney, to communal dishes like the braised lamb shank served with fried chicken, mussels, and golden rice, executive chef Fariyal Abdullahi infuses each generous portion with heart.
