Chef Shin Chang-ho masterminds Joo-Ok, whose contemporary take on Korean food immediately wowed the critics (it claimed two Michelin stars a year after it opened). Step out of the freight elevator and you’re in another world, evoking the stripped-back serenity of a traditional Korean house. The tasting menu starts with three amuse-bouches built around fermented soyabean jangs, followed by a series of nuanced, imaginative plates, like the deconstructed pheasant mandu dumplings or squid with smoked pumpkin broth. This isn’t a place that cuts any corners in its pursuit of excellence, with a two-acre plot in upstate New York where it grows its own vegetables and herbs. (Its homegrown, cold-pressed perilla-seed oil deserves a special mention, poured over razor clams and caviar in one of the standout platings.) Drinks – with or without alcohol – are inventive and expertly paired.
