Leather, uneven stone and marble are all used to great effect in the cosy yet contemporary dining room of German-born Rainer Becker’s New York outpost. Zuma’s colourful strain of Japanese fusion food has gained it a cult following in London, Dubai and Miami, and the flavours on offer here are equally non-conformist and intense. Izakaya-style sharing menus include robata skewers, pristine sushi presented on shaved ice and the signature black cod wrapped in hoba leaf (a big-leaved magnolia), as well as a selection of elaborate desserts that you’ll probably recognise from Instagram.
