Leather, iron and glass are used to great effect in the contemporary yet cosy dining room of German-born Rainer Becker's New York outpost. Zuma's colourful strain of Japanese fusion food has gained it a cult following in London, Dubai and Miami, and the flavours on offer here are equally non-conformist and intense. Izakaya-style sharing menus include robata skewers, pristine sushi presented on shaved ice and the signature black cod wrapped in hoba leaf, as well as a selection of elaborate desserts that you'll probably recognise from Instagram. There's an omakase option, of course, and if you're looking to make your visit short and snappy – though why would you be in these seductive surrounds? – they do an Ebisu express lunch menu. Drinks deserve a mention; there's an 80-plus bottle sake bar, while cocktails range from classics with a twist to the seasonally creative.
