Chef Christopher Bleidorn’s food sings, but fortunately – unlike the lyrical namesake– Birdsong will not be flying off into the distance. To the contrary, the destination for field-to-table cuisine is a fixture of the San Francisco fine-dining scene. An open kitchen and a catchy soundtrack add strong elements of theatre – if not ballet – to the tasting menus. However, the true show at Birdsong begins long before the amuse bouche. Bleidorn and company carefully source entire animals and harvests. Acquisition is followed first by in-house butchering and then a series of techniques such as smoking, curing and plenty of live-fire cooking. These factors come together in a pair of tasting menus celebrating the Pacific Northwest. Thoughtful design from Studio Saint means that the airy space also puts the team's culinary skills on show through a large glass aging room, open flames and the requisite cords of firewood. After experiencing Bleidorn’s cinematic procession of innovative bites, guests will certainly sleep in the stars.
