Chef Christopher Bleidorn’s food sings, but fortunately – unlike the lyrical namesake – Birdsong will not be flying off into the distance. To the contrary, the destination for field-to-table cuisine is a fixture of the San Francisco fine-dining scene. An open kitchen and a catchy soundtrack add strong elements of theatre – if not ballet – to the tasting menus. However, the true show at Birdsong begins long before the amuse bouche. Chef Bleidorn and company carefully source entire animals and harvests. Acquisition is followed first by in-house butchering and then a series of techniques such as smoking, curing and plenty of live-fire cooking. These factors come together in a pair of tasting menus celebrating the Pacific Northwest. Thoughtful design from Studio Saint further elevates the team's culinary skills through a large glass aging room, open flames and the requisite cords of firewood. After experiencing Bleidorn’s cinematic procession of innovative bites, guests will certainly sleep in the stars.
