The principles of New Nordic cuisine, applied to the sunny and abundant produce of California, drives the singular tasting menu, crafted in an open kitchen that spills into a dining room furnished with marble and wooden table-tops. In the past, dishes have hopped from turnips with miso and fresh horseradish to black cod with green strawberries, unripe tomatoes and wild rose petals – and desserts like grilled peaches with chamomile, sour cream and whey. Being San Francisco it’s natural that Napa and Sonoma wines make an appearance in the optional pairings, though expect the old world, from Côte-Rotie to Malaga, to get a solid look-in too.
