In 2011, dynamic culinary duo Stuart Brioza and Nicole Krasinski switched up the dim sum game by presenting New American small plates on trolleys that were then wheeled around State Bird Provisions' industrial-cool dining room. It was adventurous and inventive – and it worked. More than a decade on and having won many accolades on its journey, the restaurant is as busy as ever. Using seasonal Californian ingredients, the menu is ever-changing but the pillars remain the same – salt, fat, acid and texture. Diners can lock forks over dishes like pork belly 'salad', steamed egg tofu with pickled hoinshimeji, and the namesake state bird aka quail, fried and served with slow-cooked onions. There are heartier plates too, plus a separate toast and pancakes menu. The craft beer and cider list is strong.
