From the team behind State Bird Provisions (located next door), husband-and-wife team Stuart Brioza and Nicole Krasinski added bar and restaurant The Progress to their collection of ground-breaking establishments in 2014. Showcasing New American, modern rustic cuisine, it champions locally sourced ingredients for whole animal, whole vegetable cooking. Techniques are important to the duo, with smoke and fire, curing, fermenting, preserving and dehydrating all helping them produce big, bold flavours in a slow food style. A regularly changing menu will always thrill with must-tries like raw scallop with avocado, pomelo and cherimoya; brown butter seaweed noodles; crispy lamb's tongue-katsu; and locally farmed pig head with fennel, pink apple and fermented chile-garum to tantalise taste buds.
