Lee is no stranger to the upper echelons of dining, previously working as head chef at two-time world No.1 The French Laundry. His tasting menus are bold and daring, with barbecued quail in a steamed bun or faux shark's fin soup occupying starring roles, which are allowed to shine by the low-key decor. Master Sommelier Yoon Ha manages the award-winning wine and sake lists.
