Vietnam's bounty of fresh, seasonal produce is not just acknowledged here but leveraged, with the cocktail menu organised by ingredient, each tied to a trio of distinct drinks. Grape, for instance, appears in a Verjus Aviation, a Cherry Cobbler made with grape marc, and a Grappa Sou: all expressions of the same subject, each pulling in a different direction. The setting is arresting: a glowing neon bar presided over by a suspended sculpture of a giant marlin, the futuristic tempered by the occasional rustic touch. As the menu changes – once or twice each year – the space also shifts subtly to reflect the new concept.
