Fire, street food and nostalgia: Chef José Luis Hinostroza, hailing from Tijuana in Baja California, reinvents Mexican street food dishes with local ingredients and modern techniques. He brings the explosion of flavours of his hometown’s street food scene to the Caribbean jungle, creating unique recipes with real and sophisticated Mexican taste. Fire is an important element in the kitchen, but there are also nostalgia and the inventive nature of his work. A perfect example is the grilled octopus in recado negro terrine, served with caramelised cotija cheese, salsa macha, rocket and coriander; or the seared prawns in chili butter, plantain vinaigrette, green grosella (a native relative of gooseberries) and salsa.
