This renowned culinary destination is known far and wide for the inventive cuisine its chef and co-owner François-Emmanuel Nicol creates to showcase the diverse flavours of Quebec. In its current form, Tanière3 is the third and most modern iteration of 47-year-old stalwart La Tanière, moving from a rural location to Old Quebec under a refreshed name and vision.
Revered for its sharp, tailored service, co-owner Roxan Bourdelais runs a tight ship without losing the distinct Québécois hospitality that makes the restaurant unique. Each night, just 40 diners are lucky enough to delve into the immersive rooms of Tanière3 and experience the team's genuine warmth and professionalism.
The restaurant's multi-sensory dining experience starts well before the dining room. From the familiar welcome – after accessing the historic 17th-century vaults through an unmarked entrance using a unique key code – to the guidance given navigating through the thoughtfully divided dining rooms, the tightly knit team work seamlessly to take new and returning guests on a truly memorable culinary journey.
Small gestures like sensing diners' needs before they do to mid-meal surprises create a sense of mystery and exclusivity. Despite the exclusive feel, stiff service doesn't have a place here – individual personalities are allowed to sparkle at the table. Bourdelais' team describe each dish on Nicol's 12 to 18-course tasting menu with thoughtful details: think a link with the history of the vaults, a Canadian cultural tradition, an outstanding producer or perhaps a personal anecdote or connection. The result? An unparalleled, immersive dining experience that encompasses tradition, invention and terroir.
