Asia’s goddess of bartending

Shelley Tai's journey from a part-time nightclub bartender to helming her own minimalist sanctuary in Hong Kong, is living proof of the power of quiet dedication. With a career spanning Hong Kong and Singapore, Tai's achievement doesn't come off the back of flair-filled theatricality, but for her meticulous focus, mentorship and a dedication to doing the simple things to the utmost standard.

While getting the taste for bartending at a local Hong Kong nightclub, Tai's passion for the craft came to life at Hong Kong's legendary Quinary, starting at the bottom of the ladder to master the fundamentals training under local bar heavyweight Antonio Lai. A few meteoric years later which included her winning the Diageo World Class competition in 2019 – Tai landed at Singapore's Nutmeg & Clove to kick-off her next chapter. Rising through the ranks under the tutelage of Colin Chia, her talent saw her become the operations director of the whole Nutmeg Collective group by 2024. This Singaporean stint changed her from a shy bartender into an empathetic, highly observant mentor who led teams from the front. 

Tai returned home to Hong Kong in 2025 to open her first solo venture, Mius: a serene, mid-century modern outpost with a long travertine marble bar counter. Here, Tai's drinks programme leans into her understated demeanour. Away from theatricality, the bar is grounded in balance and elegance, showcased in Tai's line-up of cocktails that are simple in appearance and name but put together with remarkable attention to detail and tinkering.

From managing multi-venue operations in Singapore to pouring glasses of grower Champagnes for Mius regulars, she remains a force of nature in Asia's bar scene, with this peer-voted accolade recognising the profound respect Tai has earned across Asia's bar community. Tai's thoughtful precision, quiet confidence and hospitality see her deservingly named winner of the Altos Bartenders' Bartender Award 2026.
