Bacchus
Vancouver, Canada
As the restaurant at the five-star Wedgewood Hotel, Bacchus exudes grown-up glamour. First, there’s the cocktail lounge, which ranks among the city’s best: perfect for a pre-dinner sazerac or grapefruit-laced Hemingway daiquiri. Beyond the grand piano – it’s that kind of place – is the formal dining room, with its velvet banquettes, Venetian chandelier and unfailingly attentive waiters. The menu sticks to the classics, executed with precision and panache: a velvety lobster bisque, perhaps, with a hit of tarragon oil; braised bison short rib with pomme purée; or brown butter squash ravioli. This is also an excellent place to sample some stellar West Coast seafood, whether it’s half-a-dozen oysters or the head-turning, two-tier seafood tower. Lunchtimes bring a simpler menu (Cobb salads, schnitzels and the like), while breakfasts are worth booking in for, even if you’re staying elsewhere.
