Elisa

Vancouver, Canada

As its name suggests, there’s minimal macho posturing at this Yaletown steakhouse: just a warm, handsome room with curving banquettes, modern art and a glass-walled wine room, housing a persuasive collection that’s strong on old-world reds. There’s an impressive list of steaks to choose from, seared on the wood-fired grill, running from grass-fed ribeye to Blue Dot bone-in tenderloin, along with imports from further afield, like the highest grade Japanese wagyu. Sides, too, are a cut above your standard steakhouse, whether we’re talking rainbow carrots, cooked in beef tallow on the grill, a truffle and comté-laced mac and cheese, or the textbook triple-cooked fries. Elsewhere on the menu, the tartares are worth a detour: smoked bison’s arguably the standout, along with the yellowfin tuna. For those that make it to dessert, the baked Alaska is the stuff of legend, with peanut-butter crémaux and banana ice cream below its perfectly-scorched dome.
