Set within the Fairmont Pacific Rim, this flagship restaurant and bar claims to showcase the new Pacific Northwest through accomplished and inventive dishes and drinks, such as the Duck Duck Goose, with bourbon fat washed with foie gras, sweet vermouth, pear, prune saline and bitters, alongside signatures like The Botanist Marine Martini, which mixes a coastal gin blend with house vermouth, kombu, chive oil and sea asparagus.
