Talented chef Hector Laguna – formerly of fellow Vancouver restaurant Hawksworth – draws inspiration from the flora and fauna of the fertile Pacific Northwest region to create pretty plates that conceal punchy flavours. Crab chawanmushi or oven-roasted cauliflower with pickled onions sit alongside market-fresh seafood, such as seared sablefish with cod stuffed morels and baby artichokes. A terroir-driven wine list focuses on organic, sustainable and bio-dynamic growers. On brighter days ask for a table in The Garden, a glass-walled space abundant with 50 different types of plants including edible species such as green tea camellia, cardamom and ginger, which pop up on the menu.
