The restaurant’s eponymous chef Mitsuharu 'Micha' Tsumura is known for his dazzling Peruvian-Japanese fusion, with his Lima flagship Maido well-known for its dedication to presentation in the Latin American dining scene.  Led by chef Sebastián Jara, this Santiago outpost is set within the glitzy W Hotel and feels right at home with its zen décor and impressive selection of sushi, sashimi and nigiri with an emphasis on toro tuna.
